<Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <h5>Black Bean-Oat Burger</h5>

    <div>
    <div>Ingredients:</div>
    <div>2 (15oz.) cans black beans, drained and rinsed</div>
    </div>
    <div>3/4 cup uncooked old-fashioned regular rolled oats</div>
    <div>2 garlic cloves, finely chopped</div>
    <div>1 tablespoon soy sauce</div>
    <div>2 teaspoons chili powder</div>
    <div>3 scallions, thinly sliced</div>
    <div>2 tablespoons canola oil</div>
    <div>4 hamburger buns</div>
    <div>1 cup salsa</div>
    <div>Lettuce</div>
    <div>Tomato slices</div>
    <div>Red onion slices</div>
    <div><br></div>
    <div>Process beans, oats, garlic, soy sauce, and chili powder in a food processor until ingredients begin to come together, about 30 seconds. Transfer bean mixture to a large bowl; stir in scallions. Shape mixture into 4 (3/4 cup) patties. Let patties stand at room temperature 5 minutes, or refrigerate up to 3 hours. Heat oil in a large nonstick skillet over medium-high. Cook patties in hot oil until browned, about 5 minutes per side. Place 1 patty on each hamburger bun bottom, and top each with 1/4 cup salsa. Add lettuce, tomato slices, and red onion slices, and cover with bun tops.</div>

    <div>Grab 2 slices of multigrain bread and spread some pesto on on side. Layer 1 slice of Swiss cheese, grilled onions, tomato slices, 3 spring mix lettuce and another slice of Swiss cheese. Toast in toaster oven or press the sandwich on a panini grill. Slice down the middle and serve!</div>

<Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <h5>French Dip Sandwiches</h5>

    <div>Ingredients:</div>
    <div>2 large onions, cut into 1/4 inch slices</div>
    </div>
    <div>1/4 cup butter, cubed</div>
    <div>1 beef rump roast or bottom round roast (3-4 pounds)</div>
    <div>5 cups water</div>
    <div>1/2 cup soy sauce</div>
    <div>1 packet onion soup mix</div>
    <div>1 1/2 teaspoons browning sauce (optional)</div>
    <div>1 garlic clove, minced</div>
    <div>12 to 14 French rolls, split</div>
    <div>1 cup shredded Swiss cheese</div>
    <div><br></div>
    <div>In a large skillet, sauté onions in butter until tender. Transfer to a 5 quart slow cooker. Cut roast in half and place over onions. In a large bowl, combine the water, soy sauce, soup mix, browning sauce (if desired), and garlic. Pour mixture over roast. Cover and cook on low until meat is tender for 7-9 hours. Remove roast with a slotted spoon and let stand for 15 minutes. Thinly slice meat across the grain. Place on roll bottoms; sprinkle with Swiss cheese. Place on an ungreased baking sheet. Broil 3-4 inches from the heat until cheese is melted, or about 1 minute. Replace roll tops. Skim fat from cooking juices. Strain juices and serve as a dipping sauce if desired.</div>

    <div class="html-content">Many store-bought jams and jellies contain artificial flavors, dyes, and high fructose corn syrup, all of which can be harmful to your health. Take the opportunity to hand-make a healthier alternative this fall. Depending on the types of fruits used and the amount of pectin used, you can adjust the amounts of macronutrients and vitamins in your jam. There have even been studies showing the health benefits of jams and jellies related to their pectin content - pectin has probiotic effects, meaning that it feeds your gut's friendly bacteria to stimulate their growth and contributes to overall gut health!<div><br></div>

Cognitive psychologist LeeAnn Renninger shares a scientifically proven method for giving effective feedback.</span></p>
