<Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <h5>Italian-Style Egg Drop Soup </h5>

    <div>Ingredients:</div>

    <div>6 cups vegetable or poultry broth</div>
    <div>1 tsp. Italian seasoning</div>
    <div>¼ tsp. garlic powder</div>
    <div>4 eggs</div>
    <div>¼ cup shredded Parmesan cheese</div>
    <div>2 cups spinach or similar green, sliced into thin strips</div>
    <div>Salt and pepper to taste</div>
    </div>

    <div>Heat broth in a deep pan with herbs and garlic on medium heat until near boiling. While the broth is heating, slice the fresh spinach leaves and reserve. Scramble eggs in a container with a spout, then stir the Parmesan into the</div>
    <div>scrambled eggs. When broth is about to boil, slightly reduce the heat, and slowly pour the egg-and-cheese mixture (as a thin, lumpy stream of liquid) into the hot broth, which will quickly poach the "dropped eggs". After the eggs have been</div>

But this ability to categorize also exacts a heavy toll in the form of unconscious bias. In this powerful talk, psychologist Jennifer L. Eberhardt explores how our biases unfairly target Black people at all levels of society -- from schools and social media to policing and criminal justice -- and discusses how creating points of friction can help us actively interrupt and address this troubling problem.</span></p>

Each course is 30 minutes or less and is curated to provide tools, strategies, and practices to accelerate your success.</span></p>
    <p><span>This week's spotlight course is <strong><u>Overcoming Your Own Unconscious Biases</u> </strong>(22 min). </span></p>
    <p>Each of us is a member of a society that is often partitioned into groups and tribes. While this is common to most societies, it can have harmful effects in the workplace, interfering with productivity and organizational success. We all hold biases, whether conscious or unconscious. Part of understanding the role of unconscious bias in the workplace is admitting to yourself that you, too, hold biases. Once accepted, you can take an anti-bias approach to overcoming unconscious prejudice. In this course, you'll learn how to recognize your own unconscious and implicit bias and how they can fall prey to social stereotypes.</p>

    <p><span>This week's spotlight course is <strong><u>Overcoming Unconscious Bias in the Workplace </u></strong></span><em>(25 min)</em></p>
    <p>Ensuring a diverse, welcoming, and productive organization means overcoming biases. No matter who you are, you are prey to unconscious biases. To be part of a complex, diverse workplace, you must take steps to overcome them.<br>In this course, you'll learn to recognize how superficial differences  can contribute to bias and lead to prejudice and social stereotypes. You'll learn specific tactics for combatting unconscious bias and adopting an anti-bias approach. You'll also learn how to be an inclusive leader by using these tactics to overcome explicit and implicit bias across the organization and in the hiring process.

    <div><strong>Crispy Chickpeas:</strong></div>
    <div>1 (15 oz) can chickpeas, rinsed and drained</div>
    <div>2 tbsp. olive oil</div>
    <div>1 tsp. harissa powder</div>
    <div>½ tsp. kosher salt</div>
    <div>¼ tsp. granulated garlic</div>
    <div>¼ tsp. ground cardamom<br>
    </div>
    </div>
    </div>
    <div><br></div>
    <div><strong>Soup:</strong></div>
    <div>
    <div>Olive oil</div>
    <div>1 onion, diced</div>
    <div>Kosher salt</div>
    <div>2 garlic cloves, minced</div>
    <div>1 tsp minced ginger</div>
    <div>1 lb. carrots, peeled and sliced to ⅛ inch slices</div>
    <div>1½ tsp. ground turmeric</div>
    <div>1 tsp. harissa powder</div>
    <div>¼ tsp. ground cardamom</div>
    <div>1 can full-fat coconut milk</div>
    <div>1 quart chicken stock</div>
    <div>1 lb. cooked, shredded chicken</div>
    <div>2 tbsp. lime juice</div>
    </div>

    <div>
    <div><strong>Toppings:</strong></div>
    <div>Greek yogurt</div>
    <div>Parsley leaves</div>
    <div>Fresh dill leaves</div>
    <div>Sliced green onions</div>
    <div>Lime juice</div>

    <div><strong>Crispy Chickpeas:</strong></div>
    <div>Preheat the oven to 425°F. Spread the drained chickpeas out onto paper towels and pat completely dry. Toss the chickpeas in a small bowl with the olive oil and spices. Spread them out onto a sheet pan in one, even layer. Roast for 25 minutes until crispy. Let cool before consolidating.</div>

    <div>Heat a large, heavy-bottom pot (or Dutch oven) over medium heat. Add enough olive oil to coat the bottom of the pot. Once the oil is hot, add the onions and a good pinch of salt. Sauté for about 6 minutes, stirring often, or until tender and slightly caramelized. Stir in the garlic and ginger. Cook for another minute. Add the carrots. Cook for 2-3 minutes. Lastly, stir in the</div>
    <div>turmeric, harissa powder, and cardamom. Pour in coconut milk and chicken stock. Whisk until smooth. Bring liquid to a simmer over medium heat. Reduce the heat to medium-low and let the soup simmer for about 15 minutes, stirring often. Stir in the shredded chicken. Lastly, stir in the lime juice. Season with more salt as needed. Ladle soup into bowls and garnish with a dollop</div>

Instead, she used her anger as a catalyst for action. In this inspiring talk, she shares how she transformed her city by taking the risks necessary to bring about dramatic change -- and shows how you can find power in your dissatisfaction.</span></p>

    <p>To understand and appreciate diversity in the workplace, you must develop a deep understanding of yourself, as well as any unconscious bias you may have. Your ability to use a variety of strategies to effectively deal with diverse situations is very important. Equally important is the ability to share these effective strategies openly and leverage the diversity that exists within an inclusive organization.<br>In this course, you'll explore how to become aware of your attitudes toward diversity, understand the source of any cultural bias you may have, and increase your acceptance of diverse cultures, people, and ideas. You’ll also discover how to become an advocate for diversity and inclusion within the workplace.</p>

    <li>recognize the actions you can take to become aware of your values and beliefs</li>
    <li>recognize how to adjust your self-talk to manage your reactions in challenging situations involving diversity</li>
    <li>recognize guidelines for embracing social and cultural diversity in the workplace</li>
    <li>recognize how your actions can improve social and cultural diversity</li>
    <li>sequence the steps in the process for implementing a flexible communication style</li>
    <li>recognize methods to improve your active listening skills</li>
    <li>recognize attributes of inclusive language</li>
    <li>develop your own capabilities to embrace and leverage diversity in your workplace</li>

    <p>Without a diverse workforce, organizations run the risk of viewing things from a very limited perspective. The organization provides the structure for operation, but it's the individuals within that organization who carry out the mission of the organization. To get the most innovative solutions from the individuals in your business, you need to create a workplace that embraces inclusion and avoids bias and stereotyping.
    This course focuses on what diversity is and how to leverage the diversity within the organization. You’ll also explore the barriers, such as unconscious bias, that must be overcome to create a diversified and inclusive working environment.

    <li>identify key concepts related to diversity in the workplace</li>
    <li>match the approaches organizations use to deal with diversity to appropriate actions</li>
