Q: How long have you been at UMBC?

A: A little over three years.

Q: What is your current title (job or student organization position)?

A:Currently just a member of a few different orgs; previously a First Year Ambassador and Senator in the SGA.

Q: In 12 words or less, what role(s) do you play on campus?

A: Elusive creature that lurks the halls of PuP.

Q: What aspect of your UMBC role(s) do you enjoy most?

A: Being a student. I finally began to savor my undergraduate experience after my sophomore year, in which I pulled a 180 by making a drastic change of major. Since then, I have been able to understand what it means to truly love academia. By switching my field to one that actually fascinates me, I have come to enjoy the simplest of school related things, such as attending classes and being in the presence of my professors and classmates.

Q: What is the most important or memorable thing you learned in college/have learned at UMBC?

A: Don’t be afraid of changing the entire direction of your life in order to reach your fullest potential. If you genuinely believe that there is another pathway out there that will give you greater fulfillment, pursue it. The short-term ramifications resulting from your decision may seem insurmountable, but the true value of such a change will be seen in due time.

Q: Complete this sentence: "I am a big fan of __________"

A: 30 Rock. Love the witty jokes and ridiculous situations that the characters find themselves in. It’s like a celebration of absurdity, awkwardness, and nerdyness… what more could you want?!

Q: Do you have any UMBC stories, little-known facts about UMBC, favorite spots on campus, or anything else you’d like to share?

A: As an incoming freshman, I remember coming across discussions on Facebook in which new students defended their decision to choose UMBC over other more prestigious universities. It was as if coming to UMBC required a really good explanation... as if “u must be crazy” to have enrolled here. Now that I’m nearing the end of my time here, I’ve realized how baseless this notion is. I’ve developed a great deal of respect for my professors and have met students who will one day be the movers and shakers of tomorrow. I’ve been able to build a strong foundation for my future academic and professional pursuits and have enjoyed the process of doing so... I guess those who reject a school, idea, or concept just have yet to gain from the very thing they’ve dismissed.

College can be a tough time on the wallet. Between tuition, housing, and textbooks its amazing that students can afford to eat.

Lucky for us Matthew Boyle has found a solution for students, food stamps.

But wait! Aren’t food stamps for the impoverished? We know college students may not be wealthy… but are they starving?

Evidently according to Mr. Boyle,

“As a master’s student at American University and a part-time reporter for The Daily Caller, I don’t meet the traditional definition of a poor person, and in fact I’m not poor.”

Despite being relatively well off he met the official requirements for food stamps and was approved. To celebrate he had a reasonable dinner of $19 a pound swordfish, paid for with food stamps of course.

Mr. Boyle’s success got us thinking. Is he unveiling the flaws in America’s welfare system or is he scamming a program designed to take care of the most vulnerable?

Full Title: Cinnamon Raisin Peanut Butter Monte Cristos (“French toast style” peanut butter sandwiches)

It’s been a tough week at school: long hours at the office, long hours of studying, and not enough of those hours spent on relaxation. As a college student, I know I’m always one to skip breakfast because of my hectic schedule. But not anymore! Breakfast is the most important meal of the day. Check out Hua’s awesome recipe for an oatmeal buffet! On weekends, I try to treat myself to something a little more decadent. Peanut butter, raisin bread, French toast?! How could you resist this?! Also, this is a great quick breakfast/brunch to entertain with or that you can store and heat in the morning. Who doesn’t like French toast and peanut butter sandwiches? Why not combine them? So relax, it’s the weekend; have some breakfast =).

This is a one serving recipe; but it’s super easy to make more and takes only 5-10 minutes to make more! Be sure to make all of your peanut butter sandwiches at once if you plan to make more servings: not only does it save time, but it’ll be less messy – less cleanup!

Ingredients:

2 slices of cinnamon raisin bread, (I recommend the bread from Asian bakeries, available at H-Mart or Lotte, but any bread will do)

Peanut butter

1/4 teaspoon of cinnamon

Pinch of nutmeg

1 egg

Splash of milk

1 banana

Make a peanut butter sandwich with the cinnamon raisin bread

Combine the egg, milk, cinnamon, and nutmeg in a shallow dish

Cut the sandwich in half and gently dip both sides of the sandwich in the egg/milk mixture.

Over medium – medium-high heat in a non-stick skillet, spray with cooking spray and fry the sandwich halves for 1-2 minutes on each side or until both sides are a crispy golden brown. Make sure you turn the heat down to medium-low to let the egg soaked in the bread cook all the way through!

As the sandwich halves are frying up, slice the banana in half and fry them on 1-2 minutes per side. Serve them alongside your sandwich halves and enjoy!

Try this out with other types of breads and fillings! For those chocolate lovers, try a Nutella sandwich! This sandwich is also great savory-style: ham and cheese, roast beef and swiss – dipped in egg and grilled? YUM! What are your favorite Monte Cristo combinations? Post them here =)
