    <p><img src="http://erickson.umbc.edu/images/RonchHeadshot.jpg" alt="" width="135" height="192" style="max-width: 100%; height: auto;">Judah Ronch, Dean of UMBC’s Erickson School, offers a pointed letter in today’s <em>New York Time</em>s, responding to a <a href="http://newoldage.blogs.nytimes.com/2012/02/09/tables-reserved-for-the-healthiest/" rel="nofollow external" class="bo">report </a>that some retirement communities are segregating their dining facilities based on residents’ required levels of care, sometimes splitting up married couple during meals.</p>
    <p>In “<a href="http://www.nytimes.com/2012/02/21/science/its-about-more-than-food-1-letter.html" rel="nofollow external" class="bo">It’s About More Than Food</a>,” Ronch writes that although “different regulatory considerations might play into the dining decisions at differing levels of care in a continuing care retirement community…[w]hat’s important is the fact that dining is deeply tied to pleasure, identity and sense of community, and therefore the service being provided is not simply to deliver food. To make a point of segregating people because of their physical or mental condition is to threaten their sense of dignity and identity as a valued member of a community.”</p>

<Title>Kristin Waters, Office of the Registrar, Runs for Charity</Title>

    <p>Kristin Waters has set a 2012 challenge of raising $1,834.00 for First Descents, an organization that offers young adult cancer fighters and survivors a free outdoor adventure experience to empower them to defy their cancer and reclaim their lives. Kristin has set out to run 7 marathons in the state of Maryland in 2012; the total distance of 183.4 miles, with hopes of raising $10/mile. Kristin’s first marathon of the year was the 51st Annual George Washington Birthday Marathon on February 19 in which Kristin finished in 4:26:42. Her next marathon will be on March 3. <Title>Easy Crepes for Anytime!</Title>

    <p>Here is a great recipe for crepes that I found on Allrecipes.com. I reduced the proportions to make only a few crepes, rather than 12 of them.</p>
    <p>What you will need:</p>
    <p>1/3 cup of flour</p>
    <p>1 tsp of sugar</p>
    <p>1 egg</p>
    <p>1 tsp of vanilla extract</p>
    <p> 2/3 cup of milk</p>
    <p>1 tbsp of melted butter</p>
    <p>1) Mix all of the ingredients in a small mixing bowl and whisk until smooth.</p>
    <p>2) In a large, flat skillet, spray a thin layer of PAM cooking spray. Turn the heat to medium high.</p>
    <p>3) Once the pan is warm, pour a thin layer of batter in the pan. Swirl the batter in the pan until there is a thin coating of batter on the whole pan.</p>
    <p>4) After three minutes, slightly lift a corner of the crepe to see the bottom. It’s ready to be flipped when there is slight browning.</p>
    <p>5) Flip the crepe and let the other side cook for another three minutes or so. As it is cooking add your preferred toppings.</p>
    <p> The two crepes pictured are dessert and breakfast!</p>

<Title>A Few Service Sites Still In Need....</Title>

    <div class="html-content">The Shriver Center's Service-Learning Program works with a few community partners that can still use more support.<span>  Transportation is provided!!!!</span><br><br><ul><li>MS Swim at the Catonsville Y of Central Maryland - working with adults with Multiple Sclerosis - Fridays in particular, 1-4pm</li></ul>
    <ul>
    <li>Project Team - working with youth at the Glen Burnie Boys &amp; Girls Club to develop their teamwork skills.  Mondays, 4-7pm</li>
    <li>College Gardens - afterschool program at nearby College Gardens community in partnership with the Y of Central Maryland.  Primarily attended by elementary-aged youth, who enjoy tutoring and recreational activities supported by UMBC students.  Volunteers needed Tuesdays, @2:20-5:45 pm</li>
    <li>Choice Education Team - new initiative for The Choice Program, funded by the Open Society Institute, working at local school in West Baltimore with high school students to support career/college readiness activities, Wednesdays, 3-7pm<br>
    </li>
    </ul>To set up a time to meet with Service-Learning Staff, please contact The Shriver Center at (410) 455-2493.  You can also stop by to set an appointment (first floor of the Public Policy Building, just past the elevators).  The deadline for all applied learning experiences is next week (March 1st), but the sooner we can meet and process your registration, the better.</div>

Kristin has set out to run 7 marathons in the state of Maryland in 2012; the total distance of 183.4 miles, with hopes of raising $10/mile.
